Makes 3 servings | Ready in 20 minutes | Stores 5 days in fridge
½ small watermelon, diced (18oz)
2 cups arugula, spinach or mixed greens (4 oz)
½ cup cherry tomatoes, halved (4 oz)
2 tablespoons lime juice
3 tablespoons minced fresh mint
½ cup shelled pistachios, chopped
Freshly ground black pepper to taste
- Add the watermelon, arugula, cherry tomatoes, and lime juice to a large bowl. Toss well.
- Chill the salad in the refrigerator for 15 minutes before serving.
- Plate the salad. Then sprinkle on the chopped pistachios and black pepper.
